The Makers' Inspiration
In late 2021, just before Christmas, Alex launched what will be remembered in Bray Cured’s history as "The Local Inspirations Period." During this time, he introduced both hogget and venison bresaolas, drawing inspiration from the renowned Indian restaurateur Atul Kochhar of Marlow. This led to the creation of our Cacao Spiced Venison Bresaola.
How We Make It
Traditional bresaolas are crafted from lean cuts, making venison an ideal choice due to its naturally lean characteristics. We work closely with skilled hunters to select only the finest venison, which is then seasoned with a blend of spices designed to enhance its rich, gamey taste. After being cured with salt and spices, the meat is marinated in English vermouth before undergoing a maturation process in our drying room for several weeks.
Tasting Notes
The addition of cacao nibs imparts a subtle fruitiness that elevates the venison, while gentle spices like ginger and clove add warmth. This unique bresaola is perfect for dishes akin to smoked salmon, such as served on a blini with crème fraîche.
