The Makers' Inspiration
In late 2021, Alex entered a phase known as "The Local Inspirations Period," a unique chapter in the history of Bray Cured. During this time, Alex drew inspiration from the menus of Marlow's esteemed Indian chef, Atul Kochhar. This led to the creation of our Cacao Spiced Venison Bresaola, alongside hogget and venison bresaolas.
How We Make It
Venison is an excellent choice for bresaola due to its lean nature. The hunters we collaborate with provide top-quality meat, which we then cure with a blend of spices and a bath in English vermouth. The process includes salting and a period of maturation in our drying room, taking several weeks to perfect the flavors.
Tasting Notes
The cacao nibs add a fruity dimension that enhances the venison, while the spices, including ginger and clove, introduce a warm, aromatic touch. This uniquely flavored bresaola is a great fit for dishes similar to smoked salmon, like a blini with crème fraîche.

Beer match
The chocolate notes in our Cacao Spiced Venison complement the cocoa flavors in Rebellion's Black stout, while the ginger and clove blend harmoniously with the stout's creamy texture. Other stouts will work well too, but chocolate stouts are the best match.
Ingredients Wild British Venison, Salt, Cacao Nibs, Spices, British Vermouth (Sulphites), Peppercorns, Dextrose, E250 Allergens Contains sulphites. Cured in a factory which handles milk.
