The packs should be kept refrigerated and use by the best before date. All our fillets and sides can be frozen and should be used within 3 months of freezing.
We use Hampshire trout caught in the gin crystal clear waters of Hampshire’s nutrient-rich rivers to make our smoked trout fillets. We prepare and pin bone the side of trout, then cure the trout with our unique brine ready for hot smoking using an aromatic mix of apple, oak and a little hickory. The result is a gift to the senses: succulent whole side with a golden brown glow encouraging taste with its deep and layered smoky aroma.
